Today (5th August) is World Oyster Day and there's no better place to celebrate than right here at Sydney Fish Market.

Oysters play a big role in NSW’s seafood industry, with over 70 million grown each year by around 280 oyster farms across 32 coastal estuaries. But they’re not just delicious, oysters are vital to the health of our waterways. As filter feeders, they naturally clean the water by removing bacteria and particles, and their reefs create important habitats for other marine life.

Whether you're an oyster purist or looking to dress them up, we’ve got everything you need to mark the occasion.

 

Know Your Species

There are more than 50 species of oysters around the world, but Australia is home to three main types of oysters, each with their own distinctive flavour and texture:

Sydney Rock Oysters – These guys are native to Australia. Grown along Australia’s east coast, they’re smaller in size compared to other oyster varieties. A firm local favourite, they are rich, creamy, and briny with a lingering mineral finish.

Pacific Oysters – Originally native to Japan, Pacifics are now farmed in abundance in Australian waters. Typically, larger in size with a more robust and creamy flavour profile, and slightly firmer texture compared to Sydney Rock Oysters.

Angasi Oysters – Also known as native flat oysters, these are rarer to find in your average retailer and have a deep, earthly flavour. Prized for their unique taste, they are a must-try for true oyster lovers.

 

How to Pick the Perfect Oysters

Whether you're shucking them at home, or grabbing a dozen to enjoy right away, here’s what to look for:

Use your nose – Oysters should smell fresh and clean like the ocean, not fishy.

Intact shells – Shiny, unblemished shells mean the oyster is fresh. Avoid any oysters with dull or cracked shells.

Plump and glossy – The meat should look full, firm, and plump, with a solid and bright colour. Milky or spawny? Skip it.

Ask the shucker – When in doubt, chat to the shucker for their recommendation. Many of the oyster shuckers at Sydney Fish Market have been doing the job for over 20 years, so trust us when we say they know their stuff!
