Spring Seafood Recipes

Salads? For Spring? Groundbreaking. With winter behind us, we’re welcoming spring with open arms and open lunchboxes. If you're ready to swap out the comfort food for something light and zesty, we’ve got just the thing, with some recipes from Sydney Seafood School. 

Here are our top lighter seafood meals to freshen up your plate.


Spanner Crab Salad 

This salad features in our cookbook A Fish for All Seasons. Not keen on cracking your own crab? No worries, simply assemble the salad and toss through a packet of high-quality Australian cooked Spanner Crab meat, and you’re good to go.  


Tuna Tartare  

Super simple and fresh, just combine all the ingredients and fold through your tuna. Peaking in spring, Albacore Tuna is a great choice. It’s an underutilised species, which means it’s usually more affordable than Yellowfin or Bluefin. Serve with toasted baguette slices or scoop up with crackers. 
 

Pan-fried Snapper with rocket salad 

We’ve used Snapper, but small, white fish fillets will work beautifully in this recipe. Cooking fish skin-on helps keep the flesh intact, and this recipe is no exception. Simply coat the fillets, pop them in the frying pan, and in just 3 minutes you’ll have a delicious, fuss-free meal. 
 

Prawn Salad with chilli, cucumber and watercress 

No stove required, this quick, delicious salad is as easy as it gets. You can prep it a few hours in advance, making it a perfect addition to your weeknight dinner rotation. That Asian dressing? The flavour kick that makes the whole dish sing. 
 

Seared Tuna with rocket and potato salad  

In the mood for something a little more filling? Tuna really shows off in this dish. We recommend enjoying it rare in the centre, but make sure it’s sashimi grade! If you prefer it more cooked through, simply leave it in the pan a little longer. Served with crunchy golden potatoes for the perfect balance. 
 

Miang Kham (Betel Leaves)  

Bold in flavour, these betel leaves are one perfect Thai-inspired bite. They are quick to prep, full of texture, and perfect for entertaining as a light, no-fuss starter.
