Countdown to the new Sydney Fish Market

Construction of the new Sydney Fish Market building has now reached ‘practical completion’, and we’ve taken the keys to our new home!   

Over the coming weeks, we’ll work closely with our retail tenants as they complete their impressive fit outs in preparation to open to the public in January 2026. 

This marks the beginning of an exciting new chapter, where Sydney’s home of seafood moves to a transformed harbourside location and delivers a next-level experience for locals, and visitors alike. 

Below, we highlight five standout features of this ambitious new facility. 
 

1. Spectacular architecture and a ‘floating’ roof 

One of the first things visitors will notice is the striking architectural form of the new building - particularly the majestic, wave-like roof spanning approximately 200 metres in width. The roof isn’t just beautiful – it’s functional, with more than 400 solar-panel lined cassettes which will generate up to 5% of the daily energy consumption of the building.  

The roof surface allows reflected sunlight to naturally illuminate the upper levels while offering shading from direct rays. It will also collect rainwater, with the recycled water being used for irrigation and amenities. 

 

2. A major increase in scale – more space for seafood, dining and retail 

The new site is approximately 20% larger than the current facility, and it will be a much more efficient use of space. Visitors will be able to enjoy more public space and seating areas.  

The new Sydney Fish Market will be home to more than 40 retailers - including fresh seafood outlets, specialty stores, cafés and restaurants. From casual fish and chips to fine dining, the Market will cater to all tastes and budgets. 

Almost all of our current tenants, including all seafood retailers, will make the move, and be joined by over 20 exciting new operators featuring premium food retail, celebrated chefs and a variety of cuisines. You can access our retailer directory for the new Sydney Fish Market here. 

 Purpose-built to welcome more than six million visitors each year, the new Sydney Fish Market will double current visitation and deliver an exceptional experience for locals and visitors alike. 

  


3. Connectivity & expanded open public domains 

One of the key outcomes of the redevelopment is opening up previously inaccessible parts of the harbour foreshore at Blackwattle Bay. The project delivers a continuous harbour-edge walkway, 6,000 square metres of new open public spaces, and expanded pedestrian/cyclist links.  

It will unlock a 15km continuous foreshore walk from Woolloomooloo to Rozelle Bay, creating one of the world’s longest, scenic waterfront walks.   

In addition, connectivity is improved with three light rail stops in short walking distance and a future ferry wharf making the market easier to reach and more integrated with the city and waterfront. 

4. An authentic working fish market 

The new Sydney Fish Market is deliberately designed as an authentic working fish market, not just a retail or food-hall experience. 

Purpose-built for the seafood trade, the new market features dedicated wharves where commercial fishing vessels can berth and unload their catch directly into the market.  

Inside, upgraded wholesale and auction facilities continue the daily trade that has defined Sydney Fish Market for decades, connecting Australia’s fishers with seafood buyers and businesses across Sydney and beyond. 

Behind the scenes, enhanced infrastructure such as large-scale ice-making and high-capacity crate-washing systems will support the heavy demands of Australia’s busiest seafood marketplace, ensuring operations remain efficient. 

Visitors to the fish market will get to experience this vibrant working environment up close. The market’s open design allows the public to see wholesale operations in action, with viewing areas overlooking the auction room and working wharf. 

5. A world-class visitor experience  


The new Sydney Fish Market offers a unique visitor experience that celebrates Sydney’s love of seafood and its maritime and cultural heritage.  

Visitors can explore a vibrant marketplace filled with fresh seafood, specialty retailers, and dine with sweeping views of Blackwattle Bay.  

Our expanded Sydney Seafood School brings the joy of cooking to life through hands-on classes, while guided tours take guests behind the scenes to see how seafood moves from the boat to the plate. 

The Market also honours the deep cultural significance of Blackwattle Bay for the Gadigal and Wangal people, with public art and storytelling that recognises their enduring connection to sea and Country.  

Extended trading hours and thoughtfully designed public spaces invite visitors to linger, relax, and soak up the harbour atmosphere. 

Whether you visit for a quick seafood lunch, a cooking class with friends, or a sunset stroll along the promenade, the new Sydney Fish Market connects you to the people, produce and place that make it special. 

What next? 

With practical completion reached, the focus now turns to retail fit-outs and operational readiness of the building. 

 The current market site will continue full operations through the festive season, giving the community a “last hurrah” before the move.
