Once only thought suitable for the poorest of the poor, to eat only when on the verge of starvation, Oysters are now rightly considered premium fare. Commercially farmed in Southern Australian waters, and distributed nationally, we’ve three main species that service the nation. However, there are trial programs in Northern Australia that promise a variety of new species in the coming years.
