Sam Kane is head chef of Bert’s, the Merivale brasserie at The Newport Arms, inspired by early 20th century European grand hotel dining.
Sam spent a number of years with Guillaume Brahimi at his Opera House fine diner, before taking over from Damien Pignolet as Bistro Moncur head chef in 2012.
In 2016, he left Moncur to help fellow Bennelong old boy, Jose Silva open Bibo Wine Bar in Double Bay, before a stint at Paddington pub Four in Hand by Guillaume.
