Head Chef of Woolloomooloo's dazzling Otto Ristorante, Richard cooks simple, produce-driven, modern Italian food, firmly based in the classics. Add a couple of seafood recipes from one of Sydney's favourite waterfront restaurants to your repertoire, at this hands-on dinner class.

At this hands-on dinner class you'll learn the keys to fast, fabulous gourmet meals and master three simple but impressive seafood dishes - fast enough to whip up for mid-week family meals and fabulous enough to add panache to any dinner party.

We'll meet in a Chinatown supermarket*, identify some of the more unusual essentials of Thai cookery and shop for Thai ingredients. Back at the School you'll watch a Thai seafood cookery demonstration before you experiment with this popular cuisine and produce a delicious Thai lunch. *Chinatown component optional, class begins at Seafood School at 11.30am.

Vietnamese is the new Thai! With some of the heat we love, combined with clean, fresh flavours, contrasting textures and a dizzying array of fresh herbs. At this hands-on dinner class you'll learn to create two Vietnamese classics: popular fresh rice paper rolls with dipping sauce and sugar-cane prawns.

Wednesday 18 April   |   Mediterranean BBQ

Learn some simply delicious Mediterranean-inspired BBQ recipes, including tender char-grilled baby octopus, citrus-spiced swordfish and vine-leaf wrapped garfish; sure to impress family and friends at your next barbecue. At this hands-on dinner class you'll whip up an array of Spanish tapas - scrumptious little seafood nibbles that make great entrees or combine to form a delicious meal.

Saturday 21 April   |    Alessandro Pavoni from Ormeggio at The Spit and Spiedo
11am - 3pm      Class Code: PAV      $155    
Alessandro worked in Michelin-starred restaurants and five-star hotels before opening Ormeggio at the Spit where he's wowed diners with his innovative modern Italian fare, and Spiedo in Westfield Sydney where he focuses on the more traditional cooking of his home region of Lombardy. At this hands-on workshop, he'll teach you to create delicious seafood dishes with northern Italian flavour.
